Makdous is a traditional Middle Eastern food that goes back generations. Tangy baby eggplants are first boiled to soften the skin and then peppers, walnuts and garlic are stuffed inside with a hint of sea salt. They are then cured in vegetable oil. The result is an amazing taste and texture that you wont soon forget. Goes great with eggs!
